Blackberry Icy-pole Recipe

A great summer adult icy-pole, perfect for those hot afternoons. If you pick berries on the side of the Great Ocean Road, definitely make some of these.



1 bottle Prosecco

1/3 cup Blackberries

120ml Creme de Chassis

1 Lime

Icy-pole Sticks

Vessels (glasses in the shape you want your icy-pole to for the shape of)



  • To a bowl, add the creme de chassis, grated zest and juice of the lime, and blackberries. Using a muddling stick (blunt ended stick), muddle the blackberries to mix into a smooth paste.
  • Add 1 tablespoon of the berry mixture into your icy-pole vessel. Pour over the Prosecco to cover. Add an icy-pole stick and place in the freezer for 2 hours or until frozen.
